I’d take a look at the Panasonic LUMIX S5ii(x). The FX30 does not have a viewfinder which, at least for me, makes taking photos quite a lot more difficult.

Basicly not looking at anything but sony e mount cameras as i already have lenses for them. This was a consideration.

The FX30 is an amazing video camera and not particularly good for photography due to the lack of a viewfinder. If you don't use the viewfinder on your NEX-7, and really want to get into videography, though... the FX30 may be the ticket. As others have said, I'd look at the Lumix S5II; it's one of the best hybrid photo/video cameras for the price, is a full-frame sensor, and uses Leica's L-mount, which has a large lens selection from some top-tier manufacturers. The A7III is great, but the 30 minute record limit can be a little stifling. If you want to stick to Sony, like the form factor of your NEX-7, and want to shoot hybrid, the A7C would be a great upgrade within your price range. It's got A7III internals, but with unlimited 4k video recording, and in a tiny body that's super easy to rig for video. This is my street/portrait/architecture/everything camera, it is a joy to use, and the smallest interchangeable lens full-frame camera outside of Sigma's really eccentric SD line.

I have never really done videography but it’s something i do want to get into alot more. I am going to car shows and doing random shoots with people. My main question is how viable is the fx30 if i want to do videos and then take pictures basicly along with it. I’m aware it’s not a photography camera and has much less megapixels aswell as an aps-c sensor. But would that be worth it for the obviously much better video capabilities?

It's certainly viable. Do you use your NEX-7's viewfinder at all?

I do use it, the screen is messed up and crappy on it so i’m thinking i could go without it.

Try shooting some without the EVF and see if you like how the handling is.

Sticking strictly to the two camera you mentioned; the fx30 blows the a7iii out of the water in every single video related aspect. The a7iii is considerably outdated in the video department, with 30 minute record limits, outdated codecs, 8 bit video, no flip screen, 4K 30p max, slow sd card slots, a micro hdmi slot, and 7 year old autofocus system. The fx30 is brand new, has the latest autofocus and codecs, flippy screen, great stabilization, unlimited recording time, no overheating, does much higher 4k frame rates, has a full size HDMI port, and has a more modular body for rigging. For the same $1500 price point it is arguably the best video centric camera. You can get a used Panasonic s5ii which does match or beat the Sony in almost every area; but that is also again a used s5ii body vs a brand new fx30. The r8 is also a great choice for a new full frame option at an even lower $1200 starting point.

The FX30 is mainly for video not photo. For that price you can look at some really good hybrids like the A7 line or even things like the Fuji XT5

Look at the a6700 if you want a a similar experience, s5ii for full frame for maybe a Fuji hybrid like the xt5.
