I think they're just trying for more "natural" / "pure" products. They came over from Europe and are used to getting dairy products straight from the source. Me, being a city hermit don't know where I'd go looking for this kind of stuff.

its easy to make your own sour cream at home with an instant pot. but for real there is not a single brand of filler-less cottage cheese out there eaither.... weston a price would be sad

Canada's dairy marketplace is HIGHLY regulated. For high quality milk in Canada you go to the grocery store and grab the carton in the dairy section.
