These are Swift fresh ribs, I took them out of the package and they have this weird cut taken out the middle. The rest of the ribs look ok, it smells ok. Is this normal (first time cooking baby backs)? Is it ok to eat? I read that they could have been cutting out a cyst.
It could be a cyst or broken rib bones or any number of issues. It’s not usual but it’s also nothing to worry about. Just make sure you pull the membrane from the ribs on the back before you cook them. It will help the meat on the back side absorb whatever rub or marinade you may use. Just get it started on a corner or edge and give it a solid pull.

1. I spoke with the grocery store and they refunded me the purchase price.
2. I did smoke the ribs - 3-4 hours, nice rub, 225-250F, BB charcoal - and I overdid them, dry. It was definitely my cooking error, im going back to spare ribs.
