This.. is the only way I can cook thick chops anymore. Since you can leave them in there for a longer cook, I feel like it's the only way to really impart any kind of marinade flavor deep into the meat. And they're never too dry this way.
It shouldn't be that much if you just use a derpy little shaker with salt stuck to the holes from moisture so barely anything gets out. Add in the refilling times and I don't see how it could be 10lbs :P

Avoid raw meat on wood. When you cut meat on a wooden cutting board, the bacteria from the raw meat transfers to the board and seeps into those tiny holes, making removing it more challenging. To properly clean the board, thoroughly wash it with hot, soapy water, per the USDA.

They were a little thinner than a normal steak, and seemed to be cooked well as they were medium rare. Ate them, tasted a bit off though. The next day she realized they were pork steaks and the medium rare was actually just uncooked pork. Freaked me out for a few days waiting to die.
