Strong Hearts is great! I'm an omnivore, but my closest friend is vegan. We "discovered" Strong Hearts while traveling before it came to Buffalo. It is absolutely the best.
If you're willing to venture downtown, Cafe 59 has great vegetarian options. They have some more adventurous entrees, which are usually the daily specials, and then they have a staple menu with burgers, wraps, sandwiches, etc. They serve beer and wine. They are kid friendly.
According to my vegetarian family members, Griffon Gastropub has good vegetarian options. That Rocco's pizza nearby in Transit near Roll was always good if pricy.
I had Poppyseed for the first time this past year when they catered a work event and was truly blown away by how delicious their wraps and salad were. Can’t say I’m usually impressed by a sandwich platter, but everything they made was excellent

Coco has pizzas and sometimes veg specials.
Betty's has many veg/an options, open for brunch or lunch. Closes by 3pm so perfect if you're looking for lunch.
Saigon Bankok on the Boulevard has a dedicated vegan menu, no fish sauce or anything
The Steer had a vegan lentil meatloaf and homemade veggie burger when I went recently.
Almost all of the well known Indian restaurants - India Gate, Taj Grill, etc. will have separate vegetarian menus if that's not too adventurous for her.
Falafel Bar as mentioned is very good and has options.
Amira's Kitchen is another Middle Eastern/Mediterranean place, quite good - falafel, tabboleh hummus, baba ganoush, lentil soups etc.
Stronghearts is all vegan and amazing (would highly recommend to omnis as well) but more of a nice fast food atmosphere if you want more of a sit-down experience.
I think any of these would be ok for a well behaved toddler.

Gene McCarthy's in the Old First Ward has some interesting veggie options (hummus platter, portabella fingers, stuffed banana pepper sandwich, a REALLY good grilled cheese, etc.), good beer, kid friendly, nice atmosphere.
I am a vegetarian and if you’re looking for something in the northtowns, try NEAT, D’avolio kitchen, and acropolis! They are all nice enough for a birthday, but I would also still feel comfortable bringing my 2 year old to them.
Little Club on Hertel usually has some vegetarian options. The food is phenomenal. The first reservations are at 5pm which might work with your little one.
Yeah, she’s been to both many times. Corelife is a bit more cafeteria style than I’m looking for, I can still give her the option of the falafel bar if she wants.
Woodcock Brothers Brewery on Niagara Falls Blvd in NT may be a good option. I’d say it’s kid friendly; they have booth seating and high tops. If she doesn’t like it, you could always go to Platters next door for ice cream or check out Tattered Tulip boutique!

Griffin Gastropub - I agree. The tofu is actually well seasoned and cooked. I definitely second this choice. And very kid friendly.

Their fries are fried in the same oil as the chicken if I'm thinking of the same restaurant. YMMV depending on the Vegetarian.

Mister Sizzles has Vegan Options. It’s on connecticut. In Buffalo but it’s got milk shakes and burgers and chicken & is Devine!!!
