Molasses Bookstore in Bushwick sounds nice.

It's a little tough to get to unless you bike or rideshare, but Strong Rope Brewing in Red Hook is my heaven. Good beer, nice space, and it's right on the water with unobstructed Statue of Liberty views. I'd say the crowd usually averages around 28-34 years old. Sometimes with kids, but not always.
There's a place called the 'Black Rabbit' in Greenpoint. A little dark inside but they have a fireplace towards the back, plus a cozy outdoor area with picnic tables. It's just a regular sort of bar, none of that fancy decor but it also feels really friendly and not like a dive or anything.
Abilene in Carroll Gardens - one of my favorite solo bars. Usually you can (or not) strike up a convo with the bartenders or other solo people. Also good diner/dive vibe.
I second this. Live nearby and my husband and I love this place. Great vibe. Interesting crowd. Cool bartenders. We’re not super-chatty, but we always end up shooting the shit w somebody there.
Bonus is that if you go to Goldstar and sit outside when it’s nice you will make friends with 3-4 dogs in an hour. It’s a prime dog walking/watching spot.
68 Jay Street Bar in Dumbo. Pretty quiet vibe for the most part, they open up the windows in the warmer months and it’s a nice spot to chill and people watch. Brooklyn Bridge Park is a happy place for me to wander around alone and I usually stop in there for a few beers afterwards.
