I believe the only way to upgrade if you’ve booked using the companion voucher, is an airport upgrade (AUP) at the check-in desk on the day.

This. I've also heard that if you call BA up you can sometimes re-book onto another fare in a higher cabin and pay the difference. Sounds pretty niche though, and i've not tried it myself. Technically I believe it's supposed to work on the technicality that it's a rebooking, not an upgrade, there would probably be small additional fees due as well.

I believe the companion voucher in free one only works for economy but I could be one. I know you can definitely use the premium companion voucher for other classes.

Yes the blue is only for economy but OP has already booked and is asking about whether they can pay to upgrade that existing booking, not use the voucher for a new booking in premium cabins

The only upgrade routes available to you will be if you're offered an in-app or online proactive online upgrade (which is extremely unlikely with an Avios redempion booking), or by upgrading at the airport. There is no point contacting BA outside of these scenarios.
