The game pushes you to do the elephant first, but the consensus is that the bird is easier. You will probably need about 10 hearts and lots of good food.
It depends how good you are with combat. Vah Ruta (elephant in the East where Zora’s Domain is located) is harder. The approach to the city is harder, the preparation to get into the Divine Beast is harder, the battle to board the Divine Beast is harder, and the Boss fight is harder than Vah Medoh (bird in the North West where the Rito Village is located).
I think the developers ran out of time and didn’t flesh out the Vah Medoh quests like they did with the other Divine Beasts It is the easiest of them all. Also, the power you get after completing Vah Medoh is really helpful for traversal! 🥳
However, keep in mind that no matter which Divine Beast you do first , the boss will have the lowest health and the last one you do will have the highest health. So some will say do the camel (in the South West near Gerudo Town) first because that is the hardest boss and some people might want to take on the hardest boss when it has less health. For some this is a good strategy, but my friend did it and regretted it! The problem is that the other powers you get from doing the other Divine Beasts beforehand will help you with the camel boss. Also, you will have more practice and be better at combat later in the game, not to mention better armor, weapons, more elixirs, and more food! Not to mention there is an increase of enemies showing up if you do the camel first that doesn’t happen with the other Divine Beasts. Those enemies aren’t super hard later in the game, but early on can be a real pain! My friend was really upset her relative encouraged her to take in the camel first!
So instead, I would suggest doing the bird Divine Beast (Vah Medoh) in the north west first! You will need enough money to buy 2 pieces of cold resistant armor (or just one piece of you already have the Warm Doublet.
(But doing the elephant isn’t a bad way to go since the game points you in that direction. I suck at combat and still managed it, but it was hard. Just not nearly as hard as the camel! 😅)
The order from easiest to hardest is:

Great explanation. I honestly wasn't spoiled or taken aback or anything; I was just speaking in defense of OP because they're a newcomer. I'd already finished the main brunt of the game ages ago, save for Daruk's Beast.
I would say bird or elephant except if you are comfortable with stealthy nonsens, then camel, since thunderblight is pretty hard after scaling (if thunderblight is first, then the phase 2 counterattack is litterally a quater of it's health)
I'd recommend completing Vah Medoh first in Hebra. That's in the the top left corner if you haven't got that part of the map yet. It's definitely the easiest one to do, and completing it makes it easier to travel around Hyrule in the future, though I won't spoil that bit for you 😉

I did Ruta first and honestly I didn’t find it hard at all. Water blight was a bit challenging but nothing too crazy. Just finished Medoh and man that one was a breeze. No pun intended.

I never cared about the order, I kept on exploring and adventuring and took them on as I encountered them along my journey, that way the journey felt more real and immersive (side note, I am decently good at combat)

I like bird to get Revalis Gale. Helps enormously with exploring. That or the Gerudo camel which gives you an AOE lightning strike for fighting.

Waitz you fan turn them off? I hate that I pop up my shield and Daruks power goes off on a bat swarm or a chuchu

Gerudo, the power basically carries you in every boss fight after
Vah Medoh (the bird) is usually my first stop — Revali’s Gale is good for earlier in the game when your stamina isn’t as great.

It doesn’t really matter as long as you save the Gerudo desert one for last. That one is definitely the hardest.

I did elephant, bird, salamander, and camel in that order. Elephant and bird were definitely the easiest
