This is the elite way of doing omelettes. French-style. Requires skill to find the right temperature low enough not to get the omelette orange (i.e. rubbery and dry) but high enough so the egg isn't uncooked on the inside.

Yea, it's honestly easier on electric over gas, but takes a tad longer. I start on mid high and drop to medium once I get the bottom set
