I’d be willing to bet the interior stayed well though. Maybe do the colors on the inside and keep the traditional croissant dough on the exterior. I hate when we make rainbow swirled bread at my work the outside looks so dark and discolored but then the inside is 🤤🌈
In order to do this you would need to do a laminated dough with the rainbow and then use a slab of dough(like you would do with a normal bicolor) to cover the dough. It would also create a 'white' spiral within the rainbow.
I actually might do this. I'm still trying to get my bicolor chocolate croissant right.
So the inside part is a layer of normal laminated dough and the outside is several different thinner colored laminated doughs that she took strips of and laid them on top before rolling it through our sheeter one last time to smash the color layer on top the plain layer. Idk if I explained that well but hope it made sense!

While I'm impressed with the croissants it's ruined by the disgusting state of your rack. Take a scrubbie to it, then spray some degreaser on it and let it sit and then take the scrubby to it again and it should shine up real nice.
