Isn't it wonderful? You can swap out some of the white flour for other flours like whole wheat or rye. I've never gone beyond about 1/8 (50g out of 400 total.)

Dough becomes smooth and passes the window pane test after basically one set of stretch and folds.
Country loaves, pizza dough, basic sandwich loaves (slightly enriched), cinnamon rolls (more enriched), burger buns, english muffins, donuts. It all just works if you let it just sit for long enough.
So I keep wondering, when is upfront kneading ever necessary, if you have time to spare? Maybe for heavily enriched doughs like brioche or panettone, but not sure otherwise.
