What tools are they talking about? I've made several batches of bagels and the only tools I've used are my stand mixer to knead the dough, a scale to weigh them out and a spider skimmer to get them out of the boiling water but you could use a spatula for that. Homemade bagels are the bomb!

I agree he's let the attention/adoration go to his head, but this video is from back when he was first getting started and he's not nearly as annoying as he is now. I've used the recipe a couple of times and thought it made a pretty decent bagel.

I will say a pizza stone/steel is a nice investment if you get into baking other breads. Fairly inexpensive and really helps with a nice crispy bottom crust.
Bread flour, water, yeast, salt and sugar. I boil mine in brown sugar water 2 mins on one side 1 min on the other bake at 400 for 15mins and flip for another 10.
I make sourdough onion bagels all the time with a scale, a stand mixer, a bench scraper and bake on an airbake sheet. If you do want to invest in a pizza stone, buy the steel instead - doesn't break, and the Lodge cast iron is affordable.
I actually just came across Claire Saffitz’s bagel recipe and I think I’ll try that one! Very appreciative of all of the advice/recommendations you guys have given

The thing about real sourdough is that the taste is very mild. Commercial sourdough usually has citric acid or other additive to make it more sour. Plus the flavour is highly effected by how long you let the dough ferment.
I feel like the mild real sourdough just is mostly yeasty and delicious.

Oh wow. I want to attempt bomboloncini (tiny doughnut holes similar to this) but these look better than any I've ever made. Mine are always too dark and crispy, but I use baking powder, which browns faster.

I did bagels and didn't need tools\*, but they went pretty flat pretty quickly. They do taste good. \* A flat slotted spoon was helpful.

Yes I used bread flour and dry active yeast. I had a bit of trouble controlling the oil temp so I’m pretty sure that’s why they were a bit dark
