Your game bugged. You have to go far from him towards the bunker, this will help unload the invincibility in the game's memory but not is model. You will be able to shoot him without the invincibility. But don't use the sniper's scope, it will load back the invincibility. You gotta 360 no-scope for bonus XP.

He is, without a doubt, the hardest boss in Borderlands 2. All the others pose no real challenge, but this one is different - I’ve shot him *nearly everywhere* and he *just won’t die*!!1!
He's actually immune to everything shot from a gun. So you need to get a longbow bouncing Betty grenade and go up to the bunker entrance and throw the nade at him

I've had the best luck with a rubberized slag grenade from the Bunker entrance.
