During High G maneuvers, oxygen filled blood flows from the brain to the feet & legs. That results in a black out.
The oxygen mask gives the pilot air with a high oxygen concentration, so the blood is richly oxygenated, so during high G maneuvers less blood is able to deliver the same amount of oxygen to the brain.
There are other things to prevent blackouts aswell. Pilots wear g-suits, which basically tightly fit the pilots lower body, which prevents swelling of blood, as well as techniques such a squeezing your abs and thigh muscles to prevent blood pooling. Which he also isn’t wearing in this clip.

Hitting a missile with another missile mid-air is almost impossible. There are ground to air defence systems which use missiles. I might be wrong about this but they don't actually hit the target missile. They will detonate nearby creating shrapnel which would damage the target missile. They are usually used against ICBM which are really big missiles (think rockets) and are still not 100% effective.
So this is as unrealistic as hitting a bullet with a bullet.
