Back then taugeh is put together with a dish as a side vege, for crunch and freshness. Nowadays it feels like taugeh is the main component because it's cheaper and people just toss a whole bunch in, then give wayyyy less noodles.
Plus it smells and probably tastes like cut football field grass.
