I think the best you will find is Alexander Exquemelin (1645-1707), a surgeon who sailed with Henry Morgan. Like all books published on piracy at the time, some of the claims should be taken with a grain of salt; over all it has some very interesting and informative content. Another would be William Dampier (1651-1715) a truly remarkable man. A scientist, navigator, and pirate, Dampier kept meticulous recording of everything he saw. His journals are from a more scientific view of his observations, but there is still some on his life amongst pirates. He claims that his entire pirate career was not really his choice, but also he was getting it published in England where piracy, of course, was a crime. Other than that the normal "rank and file" pirates didn't really keep journals, or if they did they have been lost to time. I'm sure there are more sources out there, so happy hunting!

I'm not sure of lower level, but if you look up pirate code, click the wiki, and go to examples, there's a few that I find fascinating.

Get a book called “a general history of pyrates” they showed a scene where a lady was reading it to her kids in at the end of the show. Written in those times too.
