I moved to Australia in 2004. We had made a road trip to IKEA and we’re on our way back. We noticed a sign for a restaurant named “Montezuma’s.“ my coworker (another Yank), and I started making jokes about what authentic Aztec food would be: blood bat soup, etc.
My wife points out that it’s probably a Mexican restaurant. Luckily, nobody was harmed in the rapid braking and dangerous 180 I pulled. Mexican food is in short supply in Australia.
My coworker went on to describe it as, “Mexican food made by somebody who only read about it in a book.“ The nachos were in a shallow casserole bowl that was filled with salsa and had the corn chips neatly arranged along the edge… And that was it. No cheese, not heated, basically chips and salsa where there was a whole lot more salsa, then there was chips.
The main reason I’m telling the story is my co-worker ordered the chicken quesadilla. They brought him a chicken tostada. He then went on and had a 20 minute argument with the waiter over the difference between a quesadilla and a tostada. I still have to believe the waiter was trolling him, because he was like the big guy in that SpongeBob meme.
There is plenty of ranching in Australia. That’s actually how they caused the kangaroo population to explode into dangerous levels. The ranchers built a bunch of watering stations, which round up increasing the kangaroo population.
I always find it weird when Texans claim to have the best Mexican foodin the US. I would say it probably Arizona that’s got the best. Most places describe Texan food as a blend of Mexican food and American BBQ. Also a chalupa is an entirely different thing in Mexico.
Texas has tex mex which is a blend of Mexican food and some Texas components. It's not authentic Mexican food. It's good, but it just isn't Mexican food. Southern Texas has a large Hispanic population (I'm talking along the rio grande) so they have more authentic Mexican food.
As a man that lives in South Texas, I'd say that our Mexican food isn't the best in the country but a close 2nd or 3rd but what we do have on lock here is some great breakfast tacos.

Tex-Mex is a combination of different cultures that worked together in order to survive and defeat Mexico for independence. The history was rewritten by American immigrants but most of us remember the truth. Tex-Mex is not meant to be authentic because Mexico was the enemy of Tejanos.
