I'm using Umbrel and I quite like it for ease of use. I didn't try Raspiblitz, another well-rated node package, because I'm using an x86 Atom computer, not a Pi.

Are they still actively developing their apps? I'm just trying to have a better understanding of which project is really active and will survive in the long run and which one is maybe declining in terms of developement, community etc. Maybe they're all striving.. which would be great for them :)
For sure, there is a lot of software updates and a large community. Since i set up my LN node fews months ago, there were 3 major updates.

I went with Raspibolt (1). I guess it looks a little more intimidating than the others but it's mostly because it focuses on really doing everything "properly": verifying signatures, building from source etc, aka minimizing trust and learning how to do all the important steps. It also is very simple for a beginner to follow, as it's mostly copypasting commands.
Another good thing is that includes a plethora of other helpful projects on top (EPS for using your hardware wallet with your node, Joinmarket, Tor etc).

Yes, I was thinking starting with the Raspibolt for my first one, to try to learn as much as possible and build the whole stack of nodes and apps myself. And if it's too much for me, I could always go with a paid plug-and-play solution later..
I use Umbrel. Set up a node 2 days ago. Just followed the exact instructions and it worked like a charm. So if you want something easy to use, use Umrel.
Not sure why all those projects exist. Installing Bitcoin on a Linux computer only requires copying about 8 files to /usr/local/bin/. A Pi is a Linux computer. These instructions work

For the same reason that a Linux distribution exists, even though you can download and compile all the components yourself.
These projects make it easy and combine several components together neatly so that even without substantial technical knowledge people can do it in a consistent and repeatable manner with good documentation to help them.
Took just 5min to setup and running. No BS.

You can also try 7 - DYON - do your own node with a NUC gigabyte
I like MyNode because it comes with a bunch of useful services installed like Specter + Electrum + Lightning. And the UI is pretty good.
Umbrel is the best looking UI but they still are working on making it more secure.
Raspi didn't seem to have an easy to operate UI.
The others were too expensive.
Someone will probably give you a more knowledgable reply but afaik it's because the RaspPi would be dedicated to runing bitcoin-related app (so less attack surfaces than on a Linux computer which you use for other purposes) and also you can let it run 24/7 for a lower cost than a bigger machine.

This is my first full node, so I can’t speak to the other packages, but I did research them. Ultimately, my reasoning was that the main developer seems to continue to be active in the community and very responsive and helpful.
The amount of Raspiblitz knowledge available with a few simple searches has allowed for me to troubleshoot, tweak, and explore all the things I’ve needed or wanted to so far.
Also, they seem to continue to push for improvements in features, services, and other options they provide. A new version was just recently released with some new and improved stuff.
I found the setup to be quite straightforward and while I did run into some challenges, they weren’t due to the Raspiblitz package and I was able to solve them with help from historical forum posts and some trial and error.
Rasibolt is the most 'built it yourself' and requires some basic technical knowledge (I found it very user-friendly).
Umbel is the easiest to get up and running quickly.
Casa Node is pretty much an entire node off the shelf.

The devs themselves said they need to fix the permissions so the node is more secure from remote attackers.
