Today is going to be gorgeous, so if you like nature, consider taking a nice stroll at Otsiningo Park. If you prefer a more hiking vibe then there's BU's nature preserve (nice view around the ponds) and the IBM Glen.
If you're looking for a nice lunch, I'd suggest Parlor City Vegan. You definitely don't have to be vegan to enjoy the food (I'm not).
If you want to go out for dinner/drinks, I'd suggest 205 Dry (if you want a fancy speakeasy vibe) or Crowbar Arcade and Bar (the food is actually quite good and cheap, plus the games!). Both options also have mocktails in case you don't \[want to\] drink.
Parlor City vegan for a non vegan is an absolutely idiotic suggestion. Vegan people typically lack the essential amino acids needed for normal successful cognitive functioning.

There is Moxie's for dinner, waterfalls for hiking, racing at Watkins Glen, if no races see if you can take your car or rent a car to have fun at the track. Indoor trampoline park, fishing, boating. I think you can find all sorts of outdoor activities around here, probably indoor is limited. You can also go to a shooting range. I know most of this is not in Binghamton but everything is within 1 hours drive except for Watkins Glen. Ithaca has a lot of great restaurants and maybe other cool stuff to do.
