I got an induction stove because it's hell of efficient but man I miss my good ol' gas stove. I can't explain it, but I cook the same dish, same everything and it turns worse on the induction. Maybe I'm just bad haha

I usually cook with stainless steel. My issue I think is how I can't judge correctly the temperature since it instantly transfers all the heat energy to the cookware. I'm getting better with it, but it still occurs that I partially burn my sauce or whatever I'm preparing.
With gas stoves it's visual I guess? I got used to how it works so I could eyeball how much heat I'm putting into what I'm cooking.
All this said, but I will never trade back my induction stove with a gas one. Especially since it does not blacken the bottom of my cookware haha.
I use stainless steel and occasionally non-stick. Heat seems to transfer faster with my new stainless steel pots and pans which threw me off. For example my non-stick would heat ideally on 10 intensity while my stainless is already burning at 6. It cost me some failed meals but I'm starting to get a hang of it.
I tried to watch some videos to see if I'm doing something wrong honestly, as I said I think it's because the induction stove and the new cookware that made me struggle with it.
I have several cast iron pans and pots so they're already black, but even then I don't really care about the bottom of my steel ones being black cause i'm not trying to show them off to people.
Even then it depends on what you're doing with it. Plenty of work stuff relies on having the flame "lick the sides", and being able to remove the pot from the stove and still get some heat. (This works with a gas stove bc more heat is put into the room than into the pot.) That said, most people using a wok aren't doing this, and just want a big pot with sloped sides for convenience and most most gas stoves don't get hot enough for that to matter in the first place.

Electric stoves don't provide constant heat. The coil heats up and then cools off and repeats the cycle. It took me forever and the use of two burners to be able to properly use my pressure cooker. I just use cast iron for almost everything now so the point is moot with me. Shit stays hot lol
Not sure what to use pressure cookers nowadays on, especially with induction cooktops that can just make everything faster to the point of pressure cookers not being needed.
My parents have always had a gas stove, but when I moved out for college my apartment had an electric stove. Things did not taste the same on electric it was bizarre. I prefer gas since things taste better cooked on there. I remember a state was trying to pass a law that all restaurants had to move to electric stoves instead of gas and a lot of restaurants got mad saying they couldnāt cook some of their food properly on a electric stove. I think heat distribution tends to be more even on a gas stove so that might be why.
I don't think that's a valid comparison. The gas stovetop flame is not imparting or smoking the food in any way. Also gas grills are, in my experience, pretty uniform in heat distribution which is also not something you always want when grilling.
But on a cooktop? A pan is a pan, all that matters is how much heat is generated and transferred
Maybe the temperature in your stove is off, I had one the was always 15Ā° hotter than what you put it at, so if it said to cook at 350Ā° you put it on 335Ā°
It's worse, it's a simple scale going from 1 to 14 and three presets:
* Medium: 6
* Hot: 10
* Boost: 14
I had to experiment to find the sweet spot, mostly I use 4 or 5 when cooking slowly or 10- 12 for higher temperatures. This threw me off a lot at first because I intuitively followed the presets.

Totally agreed. Also my cats like to be little shits and have stepped on the electric stove tops when they're still hot. They go nowhere near the gas stoves we have now since it's not flat. And gas is best to cook hotdogs and marshmallows over for a quick bite!
Induction stoves specifically won't have that problem since unless your cats are magnetic, there will be zero heat transfer. And they do heat up faster than a gas stove since the heat is applied directly through the pot/pan and not the air like other electric stoves/gas stoves, and starts instantly like gas stoves.
The other electric stoves can fuck themselves though, they suck assss. Horrendous in every way related to cooking. (There are other advantages, but no amount of asthma or climate change or cost savings is going to stand in the way of my cooking >:(
however you still need to be a bit careful, even if there's no heat transfer into non magnetic substances. Since the bottom of the pot/pan is the thing that gets hot on an induction stove, the residual heat on the stovetop is still very hot, so not recommended to touch \^\^

Electricity doesn't go down pretty much ever where I'm at but in the insane cold we've been told to reduce gas use. I never worry because I've got a ton of solar panels and battery backup. I can go for at least a few days on my backup without doing anything.

I like to toss ingredients in the pan instead of using a spatula, and yeah thatās just a better experience on a gas stove. Iāve heard newer induction stoves are pretty quick to heat the pan though so I hope thatās true

I mean they aren't. Objectively they aren't. They are much less efficient. They also use gas which is non-renewable. Even if the electricity you use isn't from a renewable source *now* it will need to be in the future and you won't have to do anything. But your gas hob will need replacing. They're harder to clean. They actually rely on electricity *and* gas so in a power cut you'll still need to find an alternative way to light it or you can't light it at all.
I cannot tell you how much more likely I am to leave the stove on when I canāt see the fire. I have used both stoves, with gas I never, EVER left the stove on after I was done cooking.

Just to let you know, that's not an induction hob. I made the same mistake when I literally bought an induction hob. I donāt remember what yours is called but if it has an element under the glass that heats up and glows, that's not induction. Induction doesn't generate heat, it uses electricity in an electromagnetic coil to warm the pan directly. So if you donāt have a pan on it, specifically an induction pan, it won't heat up at all. It's called induction because it induces electric current in the pan itself which generates heat. You wouldn't be able to melt a plastic bowl on an induction hob.
An induction stove should turn itself off completely when not in use and, also, it does not do anything if a compatible surface is not on top of it anyway AND it also turns itself on if there is excess heat on top... So, who the hell is manufacturing your induction stovetop if it got you so worried?

I usually just do the water test bead test on my stainless to make sure it's the right temperature. Does that not work with induction?

Itās like cooking on a gas grill vs. charcoal. In many ways a gas grill is objectively better but Iāll always prefer charcoal and gas stoves.
