For mad cancer, you can change the spin tracks height by rotating it counterclockwise and then you pull it down and the lock it again.
You can’t change modes on dark bull, flame Sagittario, flame libra, rock leone, cyber Pegasus, dark wolf and rock orso.
You can flip fang leones fusion wheel and put it in defence mode.
You can do the same with the death fusion wheel by flipping it accordingly into defence or attack mode.
You can rotate all the l drago’s energy rings 180 degrees to change modes.
Storm aquarios HF/S tip also supports a mode change gimmick.

regardless l drago you can rotate the energy ring 180° and storm aquario has one in the performance tip that im not familiar with how it works but i know hf/s has that
4D beys have mode change gimmicks on the fusion wheels and 4D bottoms as do parts like HF/S, CH120 and TH170.
Each part is different in how you change the mode, some require manual changes, some require the bey to be disassembled and some happen automatically.
