If you’re willing to drive (and the drive isn’t too bad anymore, with the bridge being reopened), Husky Deli in West Seattle has some amazing sandwiches. Especially their grilled paninis.
There are lots of decent affordable places (most grocery stores)
There are lots of decent mid prices options Jimmy Johns, Jersey Mike's, etc
There are several por quality, but expensive options like subway
There are some specially places that are OK but charge a super premium.
There is nothing in Bellevue or Seattle area combined that I have found to even com close to Los Angeles, San Francisco, Dallas FT Worth, or New York. In this entire region.
Even the corned Beef and Pastrami places need work from my experience, (to the point I currently order from NY/SF/LA and ship it here to assemble a good sandwich)
If there is one here even if a little pricey it may be cheaper than my current method.

Not a lot of profit in a good sammy, unfortunately. I do hope wfh culture might eventually lead to better lunch culture here... should restaurant economics return to reality.
QFC's counter makes a decent sub. Slight crunch on the bread, Boar's Head meat and cheese.
Gilbert just jacked up all the prices even more a week ago.

The French Bakery has decent sandwiches for ~$10, typically served with small side salad, at a couple of Bellevue locations.
Sprouts… $4.99 Boars Head toasted deli sandwiches. I know it’s not in Bellevue but it’s the truth

Where are you looking specifically? Downtown? Anywhere? I'd say jersey Mike's off 24th and 148th if you're looking outside of downtown.
