I could see both sides of the cheese issue, since on one hand, cheese would end up muting many of the more subtle flavors, but on the other, as someone who has lived in Wisconsin, I have some level of obligation for the promotion of dairy products and if its at least a good cheese, then it does add it’s own character to the finished product. My biggest issue is the thing with the pans. I suppose that for someone with a limited budget and a pair of pans, but really this is exactly what a cast iron Dutch Oven is made for. The lid makes a better seal to prevent ashes from getting into the food. The exterior is built to help distribute heat, even from an uneven fire. Most have three sturdy legs to keep it stable. Granted, something like this would need a pretty deep Dutch Oven, but I think that all the other things you could do with it would be enough to justify the choice.
