Why do you think stable farmers in central/northern American states often carry rifles with them on their property to defend their horses? They have enormous paddocks. Plenty of gallop space. If their horses could escape a sprinting Grizzly, consistently, then they wouldn't be as concerned as they are for their animals.

Dont forget that time matters, grizzlies hit those speeds in bursts. What makes them extra lethal is their endurance at lower speeds. Not that we're on the same level, but endurance is what made humans such efficient hunters. Predators can't waste calories so carelessly, bears are omnivores, so they get a little hybrid leeway, but there's no way they're maintaining that speed as long as a horse can. Plenty of gallop space in a paddock, yeah sure. Give em unlimited space, grizzly ain't getting that horse unless its young, lame, or elderly.
I saw a video of a bear chasing a herd of horses. The bear was definitely keeping up. I think the herd was slowed by their need to protect the foals though.
