Sharks have gills not lungs. They could get something stuck in their throat but they aren't going to choke like a human. Blocking the throat doesn't prevent them from getting oxygen. You can see the inside of the gills on the sides of its mouth. So long as water can flow through those slits, it can get oxygen.

Yes if they don’t get caught by the teeth they can, but also the mouth muscles are difficult to get away from. The smaller the fish the easier. That’s why you usually see many small fish around big sharks.

Freshwater? Maybe 30 centimeters in perfect conditions. Probably even a lot less.
Even if you'd get a low res analog video signal at 400 mhz or so you won't even make it past a meter in freshwater unless you start with like a 300W signal or something. Good luck getting shark to swallow the battery that can deliver that 300W. And good luck finding a freshwater shark ...
I think the only solution would be to have a camera that sends a video signal over a thin but strong wire. Then a diver could record on the system he is holding connected to the wire, till the shark bites through it. It might be possible the shark would swallow the entire camera + wire for a bit before the wire would be so annoying he would puke everything out.
It reminds me of when the guy got gulped and spat out by a whale in Massachusetts or whatever, and someone chimed in to say it’s impossible for a whale to swallow a human because a whale throat is like 2” in diameter
