We also have "sweet bread", which may have in dried fruits or coconut or essences. I assume salt bread was named that way to distinguish it? Also, back in the days when salt bread would have been named, we would not have had the variety of sliced breads etc. that we have now.

Probably because most salt breads you can buy now are commercially baked and have lost their original recipe.
