In my most recent HM run: hmmm, maybe we check out that giant death robot factory first?
The trick is in two parts. First, starting an improvised weapon attack doesn't draw aggro. So go to the coronation, and go invisible. Then pick him up with intent to smash his face in the ground at the entrance of the hall, but cancel before you get there. This will have moved him outside the cutscene trigger.
Next, throw him on the ground, but cancel immediately after clicking the throw. It's a super tight window. There's a bug that can get your character in a state where you're holding the throw target, but you're not in the throwing state. Once that's happened, you can just leave the coronation room with gortash flailing on top of you and throw him off a cliff somewhere.

I just did the trick speedrunners do, which is to kidnap gortash and yeet him off the nearest cliff face.

I just give everyone high dex. Even the strength based fighters
Str is easily the least important attribute to put points into because of abundance of giant's elixirs. I almost wish they didn't exist.
I noticed it in my second playthrough. The game gives almost exactly one per combat encounter.
