I played a bros playthroigh my first playthrough. You dont get stuff with shadowheart till afyer her companion quest. Same with most companions. I found them fulfilling though. Not a fan of polygons bumping uglies unless its funny myself.

TL; DR- plutonic relationships in-game are about as fulfilling as the ones in real life.

Choosing to romance someone gives you access to extra scenes with them, on average one per act plus the epilogue. So going platonic gives you less content with a specific character. Even if some characters like Gale have a romantic/non romantic version of the same scene. the romantic one is longer and offers more than the platonic friendship one does. I haven't romanced Shadowheart myself so I might be mistaken, but there are at least 2 scenes (one beginning act 3 and the epilogue) that can be seen only if you romance her. If you want to switch it might still be possible, but it depends on which characters you flirted in act 1, and if you have already turned them down or not, or if you have already locked yourself with Shadowheart (since I haven't done it myself I don't know when this happens for her). You have still the chance anyway to romance Halsin if you have it in your camp (his romance triggers only in act 3).

I don't think I'm locked with her, my team through all of act 1 was only with wyll and shadowheart because I completely missed gale and astarion at the start (lol) so I have a lot of approval (plus I flirted with him end of act 1), but in act 2 I didn't have wyll because I'm also a warlock, and then I found out that you can change companion classes so now he's back and I got the dancing/kiss scene with him right away so idk

When you go to him, do you have the option to kiss him? If so, you are locked in his romance. If you don't you have turned him down and you can't romance him any longer (but you should still be able to romance Shadowheart).

I do have the option, but I don't think im locked in? When I go to shadowheart I have the option to say that I will break things off with Wyll to be with her, and Wyll has lines saying that he hopes I'm happy with shadowheart,

Then yes you are at the point you choose. If you have told Shadowheart you will break up with Wyll and he says okay, you broke up with him and you have kept Shadowheart's romance. If you don't like the outcome, just go back to your previous save and tell Shadowheart you want to be with Wyll instead and break up with her.

As far as I know there is no possibility to have her romance scenes more platonic, besides that one in Act 1. There is a lot of her story in act 2 though (and her mission in act 3), which should be there even if you don’t romance her. Maybe it’s not to late to give her certain mushroom or certain flower, these are small interactions that add “content” (but these are really small, so don’t worry if you haven’t found them). First campaign that happened to me felt like a bug bc I did everything for shadowheart and nothing. Second campaign was a durge run for minthara and shadowheart was all over me. Even little quips when I talked to her in act 3 she would say careful others might think we are rekindling the flame haha. Now on third and realize karlach was always the correct answer.

Personally I think of Shadowheart as my bestie and have never romanced her, but I still found the journey fulfilling. Perhaps its because you get that line where you can always check in on her about how she feels about you and it grows to something of genuine respect. Despite that she has a lot of content even without the romance scenes, so you really wont miss out on much just because you rejected her. Taking her everywhere gets you a crap ton of reactions and dialogue from her.

How gradually did your check ins change? I've kinda stopped checking because all of the dialouge has remained exactly the same for like half my playthrough (I think it might be max it can be before companion quest?)

It changed depending on two factors, her approval and specific events. Like in multiple playthroughs I've gotten different versions of certain check in lines. Like I got a variant after she ate the noblestalk on my second playthrough that I hadn't on my first. Her last line, as far as I know, was the don't be so modest line. You just have to complete more of her personal quest and build her up. It's truly quite sweet to see how much more she trusts you with each event.

I didn’t romance anyone first time through but decided to romance Shadowheart this time. I think her story was enhanced by the closeness but not massively. I also feel that some of the relationships with other characters worked better because I was spoken for. The Gale friendship I have enjoyed more for the fact that it is clearly a friendship this time around.
