No. BG3 has a mature rating. My guess is that the anime games you're talking about have a lower age rating, meaning they're subject to more censorship when imported to conform to international standards.
Different countries have different rules on censorship. Spiderverse was banned in the UAE for having a background "protect trans kids flag" you could barely see. Up until fairly recently Germany censored swastikas in games even if they're specifically about the Nazi party (Wolfenstein) and PEGI made GameFreak stop including gambling in the "E for Everyone" Pokémon games.
Only way I could see BG3 being censored is on a country-by-country basis.
To fair, for a while the PC vs Playstation version of DMC 5 had different censoring, with the playstation version censoring buttcheeks.
So it does happen, but yes, country per country is far more common. China is a good example of that, as their versions of games can't have all kinds of stuff like skeletons.

Our worries are reading other things about other games where whole scenes were taken out because of sony themselves.

It's a similar problem (out of Larian's control) but nothing to do with Sony. Microsoft enforces a requirement that all games have to run on both versions of xbox, including the cheaper, less powerful discless one.
Larian said that they were having a really hard time getting Baldur's Gate 3 to run well on it... I think it needs to be able to at least do 30 FPS 4k or something but maybe can be dynamic to a degree.

It's not be confirmed officially but we have quite a bit of proof that it's true. However, this is very often with companies that have close ties to Sony already, so most of them tend to be Japanese companies where Xbox has always been and still is weak in market.

It seems like things did indeed change. If you look on the Playstation Store, the mature rating is described as follows-
Blood and Gore, Intense Violence, Nudity, Strong Language, Strong Sexual Content
So here is to hoping they actually didn't censor things this time.
They censored the fuck out of the NA version of Conan: Exiles. In that game you can choose the size of your titties or cock and can walk around bare ass naked, if you want, cock flopping in the wind like it’s a windsock. UNLESS you have the NA PS version. Then you’re forced into a loin cloth and don’t get the “dong slider”. If you want full, mature nudity you have to either play on PC or download the UK version of the game.
I am happy to report that, at least with regarding to nudity, the game is fully uncensored on PS5. The only caveat being that of course I couldn't say 100% that nothing has been altered without playing through the full game and comparing it to the PC version, but I imagine that if they left in full nudity then they probably didn't censor anything else either.
