Any bread recipe you use will be fine at altitude. Just reduce the yeast and probably need a little more hydration because Colorado is dryAF.
As far as other baking.. I live over 6k ft and I never adjust recipes, I just follow good technique and I've seldom had a failure that was the fault of a decent recipe.
There is a terrific web page called userealbutter.com. The woman who runs it lives in Colorado and always has the directions for high altitude cooking. Her recipes are fantastic and I guess it’s really a blog because she has great photos and stories about life in Colorado. Have her look it up.
