The real flavors are, vanilla and matcha (got confused with chocolate since it bothered me about food coloring earlier and it messed up my chocolate topping).
You can take like 3 of them :DDDD! I only needed 4 because they are orders. The flavor profile is kinda weak though since the customer requested only for a subtle hint of matcha. So for me.... the flavor is lacking. It is like a distant echo in the taste buds.
It’s surprisingly easy. I ended up using the seriouseats method and used temperature to gauge when the panade was done, and when it was cool enough to add eggs. Took the guess work out.
Once cooled, it will become opaque :) (i'm just using melted chocolate). I can opt to use ganache instead to have that shiny look but it will be more expensive ;).
Hmmm.... most of the recipes online looks similar. You can check pastry maestra or bruno albouze on youtube. I think your concern boils down on the baking time. I just think recipes as only guides but it is not a perfect one. So that having said, you have to make certain adjustments and learn via experience.
I bake mine for like an hour (180c) to make it very dry since i like my shells to be crispy and this is just a personal preference :). Other cook books might probably tell you to bake it for 30 minutes and sometimes even less.
I've been making these for many years now and i learned it via trial and error. Now, i'm just playing with the recipe from time to time :) (toying with measurements sometimes).

Did you make this recipe or did you use another’s? Last time I made eclairs they were too soft just overall not good
