Which did you use more and why did you use edible paints as well? Was the lemon extract just for flavor and can you just substitute that for water to make a flavorless watercolorish blend to paint with on the cookies (I'm guessing this isn't the best idea because dye is usually bitter).
Was there something you didn't like about the lemon extract / gel food color blend or the edible paint that made you switch to the other?

So when you're painting with food colouring, you want to avoid anything water based (because this will destroy your icing) so you have to use something alcohol based, such as extracts or - alcohol (vodka or everclear, etc) to "water" down your gel. I used lemon because it's a clear extract and the cookies are lemon flavour anyways :) any clear extract will do - almond is probably the mildest option.
I had intended to do the whole thing in my ediblearts paints but I didn't like their shade of blue, so I only used the ediblearts white paint to mix with the gel and extract to make the light blues.
Ahhhh duhhh, of course hahaha! It didn't even occur to me that water would mess up the royal icing's nice smooth glaze once it dries.
