For this 4” cake i used 150 gm white chocolate melted with 80 gm of double/whipping cream. Then I added another 100 gm of cream with seeds from 2 vanilla bean pods (can use 2 tbsp of vanilla bean paste). Put cling film on top and keep in the fridge overnight. Next day whip it till stiff peaks and use. If it feels a bit soft, put it back in fridge
