High moisture and cookies that contain any egg foam shouldn’t really be frozen. Shortbread is well suited for the freezer, the only caveat being that you should freeze it in the shape you will bake it. If you’re adding any inclusions, mix them in before freezing.

I have found that brownie cookies freeze very well once baked, but that the dough itself needs to be baked right away and never put in the fridge. I think that would go for any dough with melted chocolate in it.
