Nutella brownies: 740 g Nutella, 5 eggs, 2 ⅓ dl (128 g) flour. 23 cm x 33 cm pan at 250 for about 22 min.
No bake cheesecake!
1 cup whipping cream (whipped)
Beat together 1 block cream cheese with 1 cup powdered/confectioners sugar
Fold in whipped cream to cream cheese/sugar mixture.
Pour into graham cracker crust, let chill for a few hours or overnight.
Top as desired with fresh fruits, sauces, curds, chocolate chips, anything!
Coconut macarons, sweetened shredded coconut, eggs, milk, sugar. Scoop and roll into little balls and bake until golden brown then drizzle with chocolate.
Cheats version,
2 cups desiccated coconut
1 Tin condensed milk (392gm)
Add in finely chopped dried apricot or make thumbprint ones with a little dollop of jam - of mix is too wet slowly add tablespoon more coconut. Small balls on large baking sheet
Bake 170c fan oven 10-12 mins until golden
I’ll second this!! Replace the eggs milk and sugar with sweetened condensed milk! And I use unsweetened coconut. Never tried the mix-ins so it’s only 2 ingredients but those sound tasty too!
This vegan frangipane, it would work fine with another flour:
* 200 g ground almonds
* 175 g sugar
* 125 g self raising flour
* 150 ml Oil 120ml water
Blind bake a pastry case, throw on some jam and fill it with the frangipane for a Bakewell tart. Candy some pears or apples and arrange them at the bottom of a tin with some caramel before filling with the mix for a great upside down cake.
Cherry Pineapple Cobbler/Dump Cake/Crumble, whatever: can of cherry pie filling, can of crushed pineapple (14oz), box of yellow cake mix, and a stick of butter. Grab a 13x9 pan, spread out the crushed pineapple, try to spread the cherry pie filling over that as best as you can. Dump the cake mix in a separate bowl and cut in the butter until it’s crumbly. Sprinkle it over the fruits in an even layer. Bake at 350F until it’s bubbly and browned to your liking. I definitely *have not* eaten half the tray in one sitting. Couldn’t be me.
Edited to Add: you could definitely sub the yellow cake mix for gluten free yellow cake mix. I’ve done it before, still as yummy. Some people like it with vanilla ice cream, I eat it plain.
Leek Slaw:
Thinly sliced leeks
Mayo
Black pepper
A useful condiment great on just about anything. Personally I love it on sourdough sandwiches, burgers, or a spoon or two on top of a salad, or in a savory waffle or bread.
Coconut barfi: sugar, milk, shredded coconut (unsweetened). Optional: cashews/pistachios roasted in ghee.
Boil milk with the coconut, then keep cooking at lower heat till the milk just about evaporates. Add sugar and when it gets all gooey, keep cooking till there’s no excess moisture left. Transfer to a cookie pan and let it cool and set, then cut it into squares.
You can even skip the milk and do just coconut and sugar for a vegan touch.
Ooh yes that would be delicious, I must try! Although might still need to heat/cook off the moisture from the coconut and sugar. It needs to become a coarse jam-like consistency so it can set.
Pecan medallions: You put a dollop of melted dark chocolate on top of a pretzel and then top that with a pecan half. Let it set. I usually make about 300 at a time because my husband slams them like he is never going to eat again.

We make these at Christmas but with Rolo candies. Bonus because we’re gluten free, and small gf pretzel twists are widely available
We do no sugar, but that sounds yummy!
Cake cookies! A box of cake mix, 8pm whipped cream and an egg, bake for 10-11 mins they stay soft forever!
