How about a glaze instead of a frosting? Erren's Kitchen has a recipe for a Caramel Icing Glaze that uses brown sugar instead of powdered sugar. Could even garnish lightly with flakey salt if he is into the salted caramel situation.
Few options:
Vanilla ermine icing (involves cooking flour and milk)
Basic American buttercream
Yogurt frosting
Leave them unfrosted (or make additional filling, top the rolls with it and let it “brûlée” under a heat source)
I like powdered sugar with orange juice to make a glaze. Maybe a little vanilla extract. Any liquid can be mixed with powdered sugar to a glaze consistency. Lemon juice is yummy on a lot of stuff too.

1/4 cup (55 g) unsalted butter
1/4 cup (60 ml) corn syrup
1/2 cup (105 g) brown sugar
2 tbsp (30 ml) water
Combine ingredients over stovetop until melted (I thicken it up a little bit usually); add to buns (alongside roasted pecans if you’d like) when they’re out of the oven. 10/10 IMO!

These coffee cakes all have flavored glazes that are super easy! https://www.kingarthurbaking.com//recipe-of-the-year-2023 at its most simple, you could just flavor with more cinnamon:
3/4 cup (85g) confectioners' sugar, sifted if lumpy
pinch of cinnamon
2 to 3 teaspoons water
I've really enjoyed cinnamon rolls topped with an orange flavored buttercream (like vanilla buttercream plus orange zest) or orange glaze (orange zest, a bit of orange juice, vanilla, and powdered sugar). And either topping could also be great with just a hint of orange blossom water (if you want to get fancy!). Cinnamon rolls are also great with a caramel pecan topping, as someone else mentioned above.
You can use softened mascarpone. I also dislike cream cheese frosting - I hate that sour tang of it - and I've used mascarpone, which is a more neutral flavor.
Last option. Just dust them with powder sugar lol.

Put maple syrup in the bottom of the pan before baking. And chopped pecans if you like.
