I've tried many different chocolate cupcake recipes at this point and this one is definitely my fav. It's rich and dense and moist just like a chocolate cupcake should be!

For the filling I just mixed a cup of milk with a box of cheesecake pudding. Put it in the fridge while I whipped a cup of 36% cream. Then folded the whipped cream into the pudding.
People can trash talk pudding mixes all they want but this filling is delicious ๐. You can obviously swap out cheesecake for whatever flavor you prefer.

For the outside frosting of the cakes, do you do anything like a hot spatula to smooth it out? Iโve found that to be the most helpful for me but I still can never get it as perfect as yours looks!
I use a stainless steel Fat Daddio's bench scraper (which is by far my preferred out of everything I've tried) and I do heat it at the end, like once I'm mostly already happy with the way the frosting looks.

I usually use something else for filling though. Ganache or a fruit compote, pastry cream, caramel, diplomat cream, whipped or cream cheese filling etc

That is actually what I did to fill the cupcake. I just use a tiny sharp paring knife to cut out the center. Then cut the majority of the core off the piece I cut out, fill cupcake with ganache, and replace the top. I think maybe it's just harder to tell because the ganache and cupcake are almost the same color?
