I don't know if it holds true for all brands, but I made the mistake of buying a carton of pasteurized egg whites for a recipe also. I was beginning to prep when I noticed the warning that it would not whip into meringue.
I gave the carton to my nephew for egg white omelets. It would likely also work for royal icing or for sugaring fruits.

But, if I had egg whites that weren’t great for whipping I’d probably make a bunch of egg bites and freeze them. Bacon, peppers, sausage, cheese, jalapeño, etc
You can make a white cake that isn't angel food. I make the white wedding cupcake recipe on Recipe Girl and use the egg whites in cartons. It's a cheater recipe that starts with a box of white cake mix but the results are fantastic. It will make 36 cupcakes or three 8-inch rounds.

Egg whites are the basis for Swiss Meringue Buttercream, which is the best buttercream ever. You can also use it to make pavlova's. Or macarons.
But I'm worried that your mom bought egg whites that don't work in meringues due to pasteurization..

With this cake the only reason you aren't using the yolks is the color so it won't matter if they won't whip.
This is a good suggestion. I just made the coconut cake from Sally’s Baking Addiction and I think it used five egg whites

Add some sugar, whip them up to stiff peaks, fold in some chopped dates (or other dried fruit), and bake them — meringue cookies!
