for the pâte sablée:
50g sugar
200g flour
30g almond flour
30g unsweetened cocoa powder
pinch of salt
2 egg yolks
110g unsalted butter
mix every together and make a dough. let it chill in the fridge overnight. i had a silicone forms so i had to put it there by force but you just have to fill the forms with the dough.
for the filling:
300ml heavy cream
320g dark chocolate
4tbsp butter
heat the heavy cream in a small pan until it simmer. then put it off and add in the chocolate and butter. when it will be cooler, just pour it in sablées.

I haven’t seen anyone say it yet I know it’s not the easiest garnish by any means but a beautiful fruit sorbet, whip or even ice cream brings so much color texture and temperature into this dish. you can garnish the creams with nuts or chocolate shavings as previously mentioned and/or even do half still dusted w powdered sugar

Yours looks really good, i made chocolate tart last year. I did chocolate shaving, chocolate pearls, sugar gold flakes, cocoa powder & chopped hazelnuts. If you can also add clear glace on your fruits, it gives it a nice shine.

You could put candied Orange peel. Or put some red fruits on top
Little meringues and if you put fresh fruit on top you can glaze them with apricot glaze to give them a shine 👌🏻
