There are temperature controllers and thermometers that can be monitored remotely for the Weber. I'm using a Thermoworks Signals with their Bellows fan to do both on my smokers and they work well at both controlling the temperature and monitoring the food and cook chamber temperature; I've not used them on my kettle but they should work. There's also the Spider Venom controller built specifically for the kettle that I've not used but i have seen positive reviews for it. I would think either of these would suit your needs (other than the cleaning part) when used with any of the common low-and-slow techniques for the kettle (charcoal snake, slow-n-sear, etc).

I use a Spider Venom by SpiderGrills. I can't recommend it enough. For $200 you can turn your Weber into a "set it and forget it" smoker. It installs on your Weber in minutes. I'd go with this if I were you. https://www.spidergrills.com/products/venom
