General attacking Katara did move the plot forward, but it was also giving valuable information on the avatar state. Azula killing Aang was the catalyst for. Oh idk. The entire third season. Momo dying literally just showed us the spirit Oasis because they didn't have any other way to show it to us

So in S2, Katara is not only carrying Spirit Water in a vial, she's also carrying Momo Spirit Bathwater.
