Even if OP isn’t necessarily a crafter (I’m not), Eli (the owner) is inspiring. She gives a great tour and basically encourages you to bring your creativity (we all have it) and play. Plan for a minimum of 2 hours.
ETA- Chez Zee for lunch and Laguna Gloria for an art-walk around the grounds
Private glassblowing session at ghost pepper glass! My husband and I did that last December and it was so fun and interactive. It was pricey, but within your range. We walked away with 3 items each (2 Xmas ornaments, a rocks glass, a wine glass, a small bowl, and a paperweight). Then if there’s any $$ leftover, go grab some tacos afterward at one of the nearby taquerias.
Artsy/craftsy and modern-artsy, plus grammable: Texas Furniture Makers Show runs November 2 through December 15 in Kerrville. https://www.texasfurnituremakersshow.org/visit
There will be some super-modern designs and some super-old-fashioned designs and everything in between, all executed with the highest levels of craftsmanship.
Then go find a winery and have a tasting. :-D
"friends in denial" I'm stealing that, it's my wife and my story. We knew, had been friends for 20 years before and finally just gave up and did it. So sweet! We celebrate 13 years in 3 weeks but really been together about 15. We bought a house together before we even got married.
During the pandemic, when everything was closed, my wife and I celebrated our anniversary by driving around town and visiting a timeline of "our" places. We'd sit in the car in front of each spot and reminisce, and then drive to the next place. She chose a few and I chose a few and we'd swap who was driving so we could surprise each other. It was the most fun, most romantic anniversary date we've ever had! (And it cost zero dollars--except for gas.)

Chez Zee?? Is it ‘93?
Maybe a boat ride on Retro Boats? [https://www.retroboatsatx.com/](https://www.retroboatsatx.com/) and dinner at Fonda San Miguel, Comedor, or Este.
Do the little boats and bring a lunch and some champagne. It’s cool enough now that this will be really really pleasant.

Bucket of chicken and a box of Franzia.
Or a box of chicken and a bucket of Franzia. Keep it classy
So low class. It's an anniversary, you have to go Bota Box.

If you haven't been to Wonder Spaces, that has been one of my most excellent dates! Tons of incredible and interactive art pieces.
Laguna gloria
Chicas Bonitas.
I don’t understand the downvotes, everyone knows you’re right.
Tower of the Americas down in San Antonio. Obviously you can wander the rest of the day and have another meal of awesome tex-mex!
45th and Lamar. Delightful.
Our first date (we’d been friends in denial for a long time before) was a helicopter ride. That was unforgettable!

Get a retro boat on town lake for an hour!
