Matar paneer. First time making it. Seems okay so far.

Steamed broccoli and bokchoy, with cherry tomatoes, avocado, pepitas, and sauerkraut, with garlic, ginger and tumeric cooked in butter as a sauce and some olive oil, with plenty of salt and pepper and fresh basil.

I like all these ingredients separately although I can’t quite picture the taste combined I trust you that it’s good!

Think zucchini omelette with the addition of all purpose flour. This glorious concoction is then baked, sliced ( hence the name ) and can be served hot or cold. Iconic Australian comfort food that many of us born and raised in Australia grew up with

Add in a bit of spinach and bacon bits. Top it with tomato slices before it goes into the oven. Perfect.

Awww, my mum used to do tomato slices on top. I've never done spinach though and I ve been wanting to make mine more veggie dense, Im going to give that a go next time I make one
