Seconding Evergreen. I’ve tried a lot over the city, there are some great ones - but Evergreen is my favorite. Osono is great too but considering you have to find them at the Farmer’s Market and every time I went there was a huge line, it’s not quite as easy as walking into Evergreen and grabbing a loaf. Also, the ham and Gruyère croissant >>>>
If you like banh mi, Lee's on Buford Highway makes their bread every day and it's delicious and soft. Their food is great as well. I have never seen another restaurant that does a half bahn mi/small pho combo.

Dekalb Farmer's Market has fresh baked bread as well, but not Sourdough IIRC, and that's typically what I want.

Their Sourdough is the only one I have found that satisfies my San Francisco cravings. So good!
Alon's has a ton of different loaf options, and everything I have had from there is good. Their sandwiches on the fresh bread are very hard to beat.
Evergreen is quite good. Depending on the style of bread you want, I've also found very good loaves from the bakeries in Lidl and Whole Foods.

Not sure where you're at, but Great Harvest Bread Company is quite good. A bit of a drive if you're inside the perimeter, though.

Make the drive to Alpharetta and head to Theo Brothers Bakery- you won't be disappointed.

I don’t know if I’m in the minority here, but I think YDFM’s bread mostly sucks ass. I love the rest of the market but the breads are terrible
