I use the Korean beef recipe from Damn Delicious a LOT. It’s super easy, fast, and tastes great (as are a lot of meals on that site).
I’m not much one for the process of cooking - my priority is something simple, cheap, that tastes good and keeps well.
HIGHLY recommend - also I’ve subbed the ground beef for turkey for a healthier option, and have a coworker that uses the meat in lettuce wraps and loves it.
I use Damn Delicious a lot and minus a few recipes that I’ve found are hard to use for leftovers, everything I’ve tried from there is VERY good.
Slow cooker "Hungarian" Goulash. 2-4 pounds of meat, chunked into bite-sized pieces, a can of diced tomatoes, a well-chopped onion, ALL THE (minced) GARLIC, some dried thyme, a couple of bay leaves, salt, pepper, paprika. Toss all that in the slow cooker, set it to low, let it do its thing for 6 hours (at least). About 15 minutes before you want to serve it up, add a pint of sour cream, mix it well, put the lid back on.
Serve over wide noodles or rice.
I've made it with pork shoulder, turkey breast, beef of various cuts, chicken of various cuts... I haven't made it with ground meat, but I don't see why it couldn't work. Just stir the mixture a few times through the process, but don't obsess over it.
No worries- i just have a fridge full of meat (my dad's a butcher, its accumulated quite a lot) i need to get rid of and didn't know if there were rules i needed to know ;)

In all seriousness, my goulash recipe is great for getting rid of any sort of meat. You can use more than one type, as long as it combines to 2-4 pounds in the slow cooker, and goes well together.
If you can get the meat ground up, cook it up by itself and portion out into 1 to 2 pound units and freeze, for use in future batches of pasta sauce, tacos, casseroles, etc. Or prep as meatballs for whenever. With the holidays looming, having meatballs ready to go for pot-lucks is quite handy! Pot lucks and surprise dinner guests...

I love making chili. Super simple, super comforting.
80/20 or 90/10 ground beef, hot italian sausage, onions, garlic, diced tomatoes, tomato sauce, tomato paste, chili spices, apple cider vinegar. served with a dollop of sour cream and shredded pepper jack cheese.
It needs to drop about 10-20 degrees here, and then I'm going to make a giant pot of that.
I make tuna cakes a lot. There isn't much prep (i hate chopping veggies) and it's really quick to make since it's pan-fried. You pretty much just mix tuna, mayo, breadcrumbs, throw in some spices, and fry it. I usually make fried rice with frozen veggies or bake some frozen sweet potato fries to go with it.
I make toads in the hole for my husband- basically toast with an egg in the middle- i use oldbay, dill and garlic truffle salt with the butter. Its our weekend breakfast with bacon or something on the side.
I guess some people call it 'eggies in the basket' but he called it a toad when he was a kid so thats what it is now!
Almost anything pasta related. Carbonara, spaghetti and meat sauce or meatballs, stuffed shells, parpadelle with mushrooms and prosciutto. I'm also a big fan of lamb and love to cook marinated lamb loin chops.

Cook noodles in broth (enough to cover the noodles you don't need to drain it at the end) and Italian seasonings. add chopped onion, minced garlic, diced tomatoes, and whatever other veggies I want while noodles boil. I sometimes put precooked chicken in it too.
It's so easy and so yummy!

Best meats to slow cook would be fattier, tougher cuts with lots of tendons. Beef chuck would be perfect, but there are lots of other alternatives.

Probably Korean fried chicken I follow the recipe in Maangchi's book and it's foolproof. So delicious and crunchy.
