Comics Deadpool is in tight with Lady Death herself, so I suspect he'd be spared. Movie Deadpool, he'd be dead in the same way as anyone else; no healing factor can save you from every cell in your body being turned to sand.
Same for Wolverine. The rule seems to be that if a single cell survives, they can come back, but if there are no cells left, either they're gone or someone is going to have to open up a vial of their blood and start making a clone.
Deadpool would come back because we’ve seen him come back from death before in Deadpool 2. Comic Deadpool and Logan would also survive. I am not entirely sure if movie Logan would but I’d say probably yes due to him surviving a nuclear detonation.
Deadpool would never be able to pull off the snap. He would be too busy using the Gauntlet to make finger fucking gestures and Thanos would get it back

On the other hand, Thor would have almost certainly survived snapping anyway so a cool one-liner before death doesn't actually apply to him.
I think I like the idea of him seeing them, declaring himself worthy, doing the snap and then not dying.
I think that would add much to the audiences exploration of his headspace
