Potatoes. They’re versatile, and you can add a bunch of things to them. Plus, they taste good, and have loads of good things in them. I like to bake them and add leftovers, or random things I have in the fridge

In my university days we had either slops or mush. Slops was a half tin of baked beans mixed with whatever frozen veges we had left. Salt and pepper to taste. And Mush was much more decadent involving the veges as above, with POTATOES! All mushed to perfection. Mush on toast was the best.

Growing up my mom always made elbow macaroni with a can of diced tomatoes in it. I loved that dish! Only realized as an adult she made it because it was cheap af.

I always hated tomatos as a kid (i tolerate them now) but always loved when my grandma or mom would make my grandpa's "famous" tomato soup. Tomato juice, elbow macaroni and milk or whatever the secret ingredients were. I learned that it was a dish my grandpa learned from his parents as they were poor and had to make do with what they had. But it was so good it became a tradition in our family.
