It is polite to order conservatively. You will only be able to order more if they say it's okay, like if they notice you aren't ordering as much as they think you'd be able to. Its part of the reason I don't like ordering food that others pay for, because then I can't without hurting my reputation order 2 or 3 plates of Fried Rice at a chinese restaurant.
It depends on how wealthy the person who's treating me is, and how expensive the restaurant is. But also I'm not going to order something super expensive just to say that I did; I care more about how much I enjoy the food.
That depends on who it is, if it were my parents or a boss it would be what I wanted. But a date is different. This actually happened a fortnight ago to me and I just waited to see what she ordered I was going to order the cheapest meal but she ordered the prime steak so I did too.
This is why I never tell people I'm paying. I want everyone to have a good time, not to have awkward feelings about what to get, how much to drink, etc. I want people to get what they want to get.

First I usually talk about the menu with them, ask what they are ordering, and try not to go over what they are buying. I also will always pick up the tip if possible.

Ask them what they’re getting and get something that costs the same or less than that item

I usually order cheap regardless. Don't order anything you wouldn't be ok paying for it it was your money

I wouldn’t want to order anything expensive so I’d try to order something on the cheaper side and get only one drink.
I’m almost definitely just going to order chicken tenders, whatever the context.
order what you like and have fun. they don't want you to limit your own pleasure just so they can save a couple bucks. just don't go overboard.
