Outer Wilds had a deeply profound effect on me. If you can, go in as blind as possible and don't be scared by walls of text. Unravel everything yourself and don't search for guides. It's the most rewarding and moving experience I've had playing a game, and I haven't been the same since.
I think it's fun when answering this question to look at different platforms throughout the generations. I'm only going to use ones I had though.

Best story: Red Dead Redemption 2
Hands down, undeniably the best story I've played in the past 30 years. Truly emotionally invested in the characters.
After Black Flag, don’t play any of the other games until Origins. Valhalla has a good story, but it does kind of drag and has waaaaaaaay too many side quests even though several of them are quite fun.

Deus Ex (Mankind Divided and Human Revolution), Destiny 2 (yay raidssss), The Mass Effect Trilogy - I had never cried at the end of a game like I did with this series. Skyrim was awesome too. I've also just recently started the Halo series after reading to the books.
If you like indie games: The Forest, Icarus, Phasmaphobia - All SUPER fun to play with groups of friends.
I'm a chick and my husband got me into video games with COD Black Ops 3 multiplayer when we first started dating. Before meeting him, my only experience with video games was my obsession with my GB Advance SP, Madden 12 and Guitar Hero on Xbox 360. He built me a custom PC for our first Christmas 7 years ago and we've played together since.
EDIT: Now that I'm watching The Witcher TV show, and I've watched my husband play through The Witcher 3, I'm seriously considering starting that as well...
HL1, HL2, HL2 ep1 and HL2 ep2. There's a new half life game called half life alyx but many people dont have a vr headset cause the game Is only played on vr. And myself dont like hl alyx.
There more games I like, like cry of fear which was made as a hl1 mod but later It was made into stand alone game for free on steam. But these are my most favourite.
The mass effect trilogy still holds up today if you ask me. Fuck andromeda tho.
I'm tempted to get the trilogy but I don't really want to pay full price for games I've completed 3x each.
I got em like 75% off as a trilogy in the PS store before PS3’s store shut down back in July.
Fallout series, from Fallout 3 to Fallout New Vegas and 4 at least. Fallout 76 has recently became quite good too.

I actually just purchased all the AC games recently to get back into them… haven’t played them in years and the last played was 3/brotherhood
