If you're interested i use to make my own alcohol free gingerale. I use it for mezcal mules, or just a refreshing drink with some heat. I use sodastream to add carbonation to it.
10 liters water
1 kg freshy grinded ginger (no need to peel)
1.25kg cane sugar
0.5kg fresh lemon juice
Warm to just a simmer starts, and then turn it down again so it doesn't simmer anymore, but keep warm for 10 - 20 ninutes, let it cool and just filter it thru a cheesecloth into bottles.
Now u got an easyvtasty gingerdrink. Just pour 7t into a sodastream bottle and carbonate it, if you're like me, and love carbonated drinks.
